Ingredients
- 2 cooked baked potatoes
- ¾ cup OKA L’Artisan Swiss-Style Smoke (100 g)
- 2 tablespoons whipping cream
- 4 slices bacon sliced in small strips and cooked
- 1 chopped green onion
- Salt and pepper
Potatoes will always occupy a special place in our hearts. This may be partly due to our Canadian heritage or because they go so well with OKA cheese, but we'll never get tired of eating them. Especially when they're baked in the oven with OKA L’Artisan Swiss-Style Smoke cheese and crispy bacon.
Preparation
- (Can be prepared up to 2 days in advance)
- Bake potatoes 45 minutes in the oven or the microwave at high 5 to 6 minutes, having poked the skin beforehand. When well done, leave to cool for a few minutes.
- Cut potatoes in halves lengthwise and gently remove flesh (leaving a fine layer on the skin inside) taking care to not tear the skin.
- In a large bowl, mash potato flesh, bacon, shallot and OKA L’Artisan Swiss-Style Smoke. Add salt and pepper.
- Return potato mixture to potato skins until they overfill.
- Cook in the oven for 20 min. or 15 min. on BBQ top shelf.
