Ingredients
- 8, 8” tortillas
- 1 cup grated OKA Light (130 g)
- 1 thinly sliced onion
- 1 thinly sliced red pepper
- 1 chopped garlic clove
- 1 tablespoon vegetable oil
- ½ cup corn kernels (frozen or canned)
- 20 to 30 fresh cilantro leaves
- 1 cup cooked chicken
- Salt and pepper
With experience, we learn that making healthy cooking choices doesn't mean depriving yourself of good things. Made with OKA Light cheese, these homemade chicken quesadillas are an excellent option if you want to eat better without compromising on taste!
Preparation
- Cut onion and pepper and brown in a very hot skillet with oil and garlic for about a minute. Add salt, pepper and remove from heat.
- Place 4 tortillas on a work surface. Divide onion and pepper equally on each tortilla. Add in equal parts, cheese, cilantro, chicken and corn.
- Cook in a large enough frying pan on medium-high heat for 2 minutes per side (until lightly brown)
- These quesadillas can also be cooked on the BBQ at medium heat for 2 minutes on each side.
- Serve with:
- Salsa;
- Sour cream;
- Guacamole.
